Terroir

Plots : this white Mercurey is coming from 7 different plots accross the village.

Climat & Sol : the diversity and tipicity of each plot reflect their richness in this
white Mercurey.

The soil is mainly composed of clay and limestone with a limestone
predominance.

Winemaking and Aging

To preserve their integrity, grapes are carefully harvested and sorted out by hand.
Following the pneumatic press, juices stay in a vat overnight for a cool settling down and then are directly filled in tanks or barrels depending on theyr aromatic profile.

Fermentations and aging are taking place for 30% in traditional Burgundian 400 litres barrels and 70% in stainless steel vats for 10 months.
We only use light toasted French oak coming mainly from Bourgogne, Allier and Vosges forests.

Tasting notes

EYE
Nice light yellow colour with green reflects.

NOSE
The nose is intense, fruity and floral.

PALATE
In the mouth, the wine is intense, fresh and with a
long finish. Seductive and well-balanced wine.

Food and wine pairings

Our white Mercurey 2019 will be well paired with a line-caught seabass or some squids.

Service and cellaring

It can be served from now at 12-14° C or kept in cellar for 5 to 10 years.

Art of tasting

Owning great wines in your cellar is not enough, you also need to know how to serve them.
Température is an essential element, around 53-57° F for the white and 55-59°F for the red. And if you don't have the right tasting glass which will amplify the wines's aromas, you may considerably reduce your tasting pleasure.
A great glass gives a large ventilation surface to the wine and a tightening neck, which allow the nose to grasp more easily the richness and the complexity of a great wine.
