Terroir

Two plots 'En Pierrelet', planted in 1990, located right behind Château de Chamirey.
Surface : 2,9670 hectares (7,32 acres)
Climat & Soil : smooth terrasse offering a mix of clay and limestone with a limestone predominance. Huge concentration of small white stones on the surface. South-East facing.

Winemaking and Aging

To preserve their integrity, grapes are carefully harvested and sorted out by hand. Whole bunch pressed.
Following the pneumatic press, juices stay in a vat overnight for a cool settling down and then are directly filled in barrels by gravity.
Alcoholic and malolactic fermentations take place in the barrels.
The aging process is taking place in traditional Burgundian 228 litres barrels as well as 400 litres barrels for 11 months, with around 15% of new oak.
We only use light toasted French oak coming mainly from Bourgogne, Allier and Vosges forests.
Light filtration before bottling.

Tasting notes

The wine is showing a pretty yellow gold colour with green tints.
The nose develops sweet spices aromas, nutmeg and white flowers.
On the palate, wine is ripe but sharp. Lightly oaky with a lovely aromatic focus on green fruit and buttery aromas.

Food and wine pairings

The Mercurey blanc « En pierrelet » 2016 will perfectly match with delicate food such as salmon tartare or Tandoori chicken. And for the cheese course, a fined goat cheese.

Service and cellaring

It can be served from now at 12-14° C or kept in cellar between 3 and 5 years.

Art of tasting

Owning great wines in your cellar is not enough, you also need to know how to serve them.
Temperature is an essential element, around 53-57° F for the white and 55-59°F for the red. And if you don't have the right tasting glass which will amplify the wines's aromas, you may considerably reduce your tasting pleasure.
A great glass gives a large ventilation surface to the wine and a tightening neck, which allow the nose to grasp more easily the richness and the complexity of a great wine.
